Beetroot Carpaccio

Excellent tor the prevention of heart disease and hypertension,?this dish is also high in antioxidants,

ingredients ? serves 1
3 60g beetroot
50g grapefruit, in segments
45g orange, in segments

for the dressing
3g cinnamon powder
8g honey
20g low fat yogurt
salt

for the salad
20g rocket leaves
10g pinenuts
5g olive oil

method
Steam the beetroot until soft, and allow to cool. Then slice it thinly and
arrange on a plate.
Mix the yogurt with the cinnamon powder and honey for the dressing,
then pour the mixture sparingly over the beetroot slices.
Arrange the grapefruit and orange segments and pinenuts on the top.
Finally, mix the rocket, olive oil and salt, and place in the center.
